Brigids Christmas Cake Recipe is a rich and moist fruit cake. Super easy to make and will become a family favourite.
- Soak the fruit in the whiskey or brandy for a couple of days
- Cream the butter and sugar together until light and fluffy
- Add the eggs one by one
- Add the flour, baking powder and spices and stir until fully combined
- Add the treacle
- Add all the fruit and mix well
I bake at 140 fan for approx 3 hours (check regularly after 2 hours ) but I don’t time it, I know myself when it’s done I know my oven I test the centre but I know by looking at it and the smell and by pressing it.
8 inch cake tin fill to about a half inch from the top
With any leftover mix pop it into cupcake cases or mini loaf tins and bake.
