We have gathered together some information and quantities for you, to help you get the perfect ganache to use with your Kit.
Always use good quality chocolate with a high coco solid content and for white chocolate it has to have a high coco butter content.
Make sure your ratios are right
For MILK and WHITE chocolate especially, set it in the freezer. These chocolates have more fat content and need longer to set and colder conditions. The freezer is perfect.
If you have leftover ganche don't worry it freezes really well. leave it in your bootle and when you are ready to use it again pop it in the microwave to warm up.
